AIP ‘Jam’ Drops

Ingredients

1 cup TCL-AIP Flour

¼ cup coconut oil, melted

1 tbsp vanilla essence

1 tbsp gelatin powder

1 tbsp raw honey

1 tsp baking powder

 

Method

Preheat oven to 180°c and line an oven tray with baking paper and set aside.

Place all ingredients in a small bowl and combine well using a metal spoon.

Roll small teaspoon size portions into balls and place on prepared tray.

Using the handle end of a wooden spoon (or simular) gently make a small indentation in the centre of each ball; this will be where you place the jam. I usually make the hole about 5mm deep, but it’s totally up to you how you want them to look; flatter or roundish.

Place a drop of jam in the centre of each biscuit. Place tray in oven and bake for 15-20 mins or until the cookies are golden on the underside.

Remove from oven and allow them to cool. Careful the jam will be super-hot!
