Gluten Free Pasta

Because this pasta contains no gluten, you don’t have the elasticity effect with the dough so it cannot be worked and stretched.   You can roll it out in between two sheets of baking paper to create sheets to make lasagne. Or push through a pasta maker such as the cold press juicer with a pasta attachement.

Ingredients

200g amaranth flour
200g buckwheat flour
200g tapioca flour
5 eggs
3 tbsp extra virgin olive oil

For cooking

filtered water
1 tsp salt

Method

Place flours in a large bowl.Add eggs and oil and slowly combine with a wooden spoon. Thermomix method: Set on closed lid position knead for 1 minute  20 seconds.
Tip onto a clean work surface and knead until smooth.

Create your own pasta noodles or sheet using the above suggested tools.

Bring water and salt to a boil.  Gently add pasta and cook until just tender. Depending on the thickness or your noodles this could be 5-15 minutes. test a few times during cooking as you don’t want to overcook.

Drain and serve and enjoy.
